Fish Rub - Influenced by the aromas of feasts in the Balearic islands: Majorca, Minorca, Ibiza, and Formentera. Arabic, African and even some Northern European influences are to be found in the traditional meals of the islands.Featured Ingredients: cumin, lime and orange zest, lime juice, aleppo pepper, scallions, sweet paprika, cilantro, pink peppercorns and other spices.

Complementary Sauce: Purée 2 cloves of garlic, 10 leaves of mint, and 1 cup peas with ¼ cup of olive oil and a dash of lime juice.
Suggested Recipe: Liberally sprinkle the rub all over the fish or chicken, roast or poach as recommended.
