Lamb or Game Rub - Australian cuisine, strongly influenced by the Pacific Rim and those that settled the land, is known for its freshness and diversity. It's also known for its youth, allowing Australian chefs greater liberty to experiment with food.Featured Ingredients: peppermint, parsley, ginger, lemon juice and zest, orange zest, cumin coriander seeds, rosemary, pink peppercorns, and other spices.
Expected Taste: Strong mint and citrus flavors provide a refreshing taste to lamb and game.
Marinade: 1/4 cup Beef Stock, 2 tbsp Olive Oil, and 2-3 tbsp rub. Marinate for 6 to 8 hours.
Suggested Recipe: Sprinkle liberally and rub into the meat to infuse flavor. Applying the rub a few hours before grilling or roasting allows the spices penetrate the meat. Refrigerate until ready for cooking.
